Halloween Stuffed Capsicums
Celebrate Halloween this year with these fun & delicious vegetarian stuffed capsicums.
The perfect dinner for the whole family with all the right nutrients to keep those little yummies satisfied.

Serves 4
YOU WILL NEED
4 capsicums
1/2 cup quinoa
50ml salted-reduce veggie stock
1 tbsp olive oil
1 small brown onion
1 garlic clove
1/4 tsp cumin powder
1/4 tsp paprika
1/4 cup black beans
1/2 cup corn
4 medium tomatoes
grated cheese (optional)
METHOD
Preheat the oven to 180 degrees on fan bake.
Cut the top off your capsicums and scoop the inside out. Cut the halloween shapes and set aside.
Cook the quinoa in the veggie stock
Heat a saucepan with olive oil over a medium heat, add the onion and garlic followed by the spices.
Add your black beans, corn, and chopped tomatoes and stir.
Add the quinoa and mix together, remove from the heat and leave to cool.
Spoon the mixture into your capsicums and sprinkle with cheese if desired.
Cook in the oven for 15 minutes and set a side to cool. Enjoy!
