Chocolate Energy Bites

Prep time: 10 minutes 

Yields: 10-12 

 

Ingredients: 

1 ½ cup rolled oats 

2/3 cup shredded coconut
½ cup almond butter
½ cup chocolate chips
¼ cup honey
1 teaspoon vanilla extract
½ teaspoon cinnamon (optional)

 

Method: 

Add all ingredients into a mixing bowl and stir all ingredients until thoroughly combined. If mixture is too dry, add a touch of water. Using a tablespoon, scoop mixture and roll into balls. Mixture should make 10-12 balls. These Chocolate Energy Bites can be stored in an airtight container in the refrigerator for 1 week.
