Crumbed Chicken Tenders, by Libby

 
 

This recipe takes approx. 25 minutes from start to finish and is a delicious healthy twist on a classic comfort food. Check out the recipe below by nutritionist Libby Boxall (Matthews).


Prep time: 10 minutes

Cook time: 15 minutes

Serves: 4


Ingredients:

450 grams chicken breast or thigh

¾ cup flour

3 eggs

1 teaspoon salt

¼ cup water

2 cups breadcrumbs

Method:

Preheat oven to 180 degrees on fan bake.

Line an oven tray with baking paper.

Place flour and salt in a bowl and mix.

In a separate bowl, whisk eggs and water together.

Place breadcrumbs in a third shallow dish. Cut chicken into small strips. Dip chicken into flour and toss to coat. Dip into the egg mix and then into the breadcrumb mix.

Bake for 12-15 minutes, or until chicken is crispy.

Serve warm.

Yogurt Dipping Sauce

Prep time: 5 minutes

Ingredients:

½ cup Greek Yogurt

1 garlic clove, minced

1 tablespoon chives, minced

½ teaspoon salt

Juice of 1 lemon

Method:

Mix ingredients in a small bowl and serve.
