Chicken Vegetable Fritters, by Libby

 
 

These delicious Chicken and Vegetable Fritters are quick and easy to make and are the perfect option for lunch, dinner, or added into the lunchbox! Check out the recipe below by nutritionist Libby Boxall (Matthews).


Prep time: 15 minutes

Cook time: 25 minutes

Makes 10 Fritters



Ingredients:

400g ground chicken

2 medium courgettes, grated

1 egg

200g cheddar cheese, grated

1 garlic clove, pressed

1 teaspoon salt

1/4 cup green onion, finely sliced

1 carrot, grated

1/4 teaspoon pepper

2 tablespoons olive oil



Method:

Place grated courgette and carrot in the centre of a clean tea towel and squeeze excess liquid out, then place in a bowl.

Add ground chicken, salt, pepper, egg, cheese, garlic clove and green onion. Heat a skillet or frypan over medium heat and add oil.

Place a heaped tablespoon of the mixture into your hand and form a round patty. Cook for 3-4 minutes on each side. add more oil to the pan if needed.

Serve by itself or with a side of sour cream or Greek yogurt.
