Chocolate & Berry Chia Seed Pudding

INGREDIENTS

½ ripe avocado

1 cup milk

1 cup strawberries, stem removed, halved

3 tablespoons cocoa powder

2 tablespoons almond butter

4 tablespoons honey

¼ cup chia seeds

Toppings (optional): Berries, Nuts, Coconut, Mint

METHOD

Add avocado flesh to a blender or food processor. Add berries, cocoa powder, honey, almond butter and milk. Blend until smooth and then pour into a bowl.

Pour in the chia seeds and mix well.

Cover and refrigerate for 2-4 hours.

Divide the pudding among 2 bowls and top with toppings of choice.
