Blueberry Ginger Mocktail

INGREDIENTS

4 cups water

1 ½ cups fresh blueberries

1 tablespoon fresh grated ginger

2 tablespoons brown sugar

Juice of 2 lemons

4 cups sparkling water

Fresh mint leaves

Ice cubes

METHOD

Place water, blueberries, and fresh ginger in a small pot and bring to boil over a medium heat.

Add the sugar and stir well. Turn the heat to the lowest temperature.

Using a wooden spoon or spatula, mash the blueberries. Simmer for 10 more minutes on a low heat.

Once cooled, strain the blueberry syrup into a bowl. Press the blueberries into the strainer to get as much juice out as possible.

Fill 4 glasses with ice, 2/3 cup blueberry syrup. Top with sparkling water, lemon juice and mint leaves.
