Burrito Bowl

INGREDIENTS

½ avocado, mashed

¼ red onion, finely chopped

Handful coriander, roughly chopped

¼ cup sweet corn

1 jalapeno, thinly sliced

1 capsicum, chopped

¼ cup rice, cooked

1 cup corn chips

¼ cucumber, sliced and halved

Dressing:  

Juice of 1 lime

METHOD

Place all ingredients into a bowl and top with lime juice.
