Pesto Caprese salad

INGREDIENTS

150 grams fusilli pasta

4 spring onions, trimmed and sliced

1 capsicum, de seeded and roughly chopped

200 grams cherry tomatoes, halved

Handful fresh basil leaves

Dressing:  

4 tablespoons olive oil

2 garlic cloves, crushed

½ teaspoon smoke paprika

¼ teaspoon salt

½ teaspoon pepper

100ml tomato pasta sauce

METHOD

Bring a large pan of salted water to boil and cook the pasta for 5-10 minutes or until soft. Drain and set aside to cool

In a small bowl, combine the dressing ingredients.

In a large bowl. Combine pasta, spring onion, capsicum, tomatoes and basil leaves, drizzle with dressing ingredients and serve warm.
