Delicious little Halloween Cut Kumara & Baked Chicken Bites!
These chicken bites are brightened using turmeric and the special ingredient mango to complement the savoury taste. Perfect for a halloween dinner or on the go bites, simply store then in a contain er and pop them in your baby bag for a quick homemade snack.

Ideal for toddlers 1yo+
Potential allergens: This recipe is wheat free but not gluten free. Optional: use gluten free oats.

Serves 10 balls

YOU WILL NEED

  • 1/2 cups old-fashioned oats or gluten free oats

  • 50-100ml milk or almond milk

  • 50g carrot

  • 30g brown onion

  • 40g frozen or fresh mango

  • 1 tsp turmeric

  • 100g chicken mince

  • 1/4 small kumara

METHOD

  • Preheat the oven to 180 degrees and line a tray with muffin cups.

  • Slice a few kumaras, cutting two triangles for the eyes and a triangle like shape for the mouth and set a side.

  • Soak the oats in a bowl for 10 minutes or until soft.

  • In a blender or food processor blitz the carrot and onion until finely chopped.

  • Add the mango (fresh or frozen) to the blender, followed by the oats, turmeric and chicken mince and pulse to combine.

  • Season with sea salt and pepper

  • Using a spoon and wet hands, spoon the meat mixture into rough balls and place them in the muffin trays.

  • Place the halloween cut kumara on a baking tray with baking paper, lightly sprayed with olive oil and place under the chicken bites.

  • Bake for 25 minutes and enjoy!
