Date & Coconut Oaty Slice
These Date & Coconut Oaty Slice are non-bake and only take 10 minutes to whip up. A great homemade energy bar for your toddlers to enjoy out and about, made from whole food ingredients for those growing tummies!

Serves 10 bars
YOU WILL NEED
3/4 cups old-fashioned oats
1/2 cup desiccated coconut
10 medjool dates
2 tbsp peanut butter (optional)
1 tbsp unhulled tahini
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
METHOD
Line a small baking tray with baking paper.
In a food processor, roughly blend the rolled oats into a flour texture. Pour into a seperate mixture bowl.
Add the desiccated coconut, cinnamon and stir to combine.
Roughly chop the medjool dates up finely add them into the mixture.
Followed by the peanut butter (optional) or tahini and vanilla extract.
Using your hands to knead the mixture together.
Press the mixture into the baking tray 1-2cm in depth and fridgerate for 1 hour.
Slice bars evenly and store in the fridge or freezer for longer keeping & enjoy!
