Date & Coconut Oaty Slice

These Date & Coconut Oaty Slice are non-bake and only take 10 minutes to whip up. A great homemade energy bar for your toddlers to enjoy out and about, made from whole food ingredients for those growing tummies!

Ideal for toddlers 1yo+
Potential allergens: This recipe contains gluten, peanuts, sesame.

Serves 10 bars

YOU WILL NEED

  • 3/4 cups old-fashioned oats

  • 1/2 cup desiccated coconut

  • 10 medjool dates

  • 2 tbsp peanut butter (optional)

  • 1 tbsp unhulled tahini

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon vanilla extract

METHOD

  • Line a small baking tray with baking paper.

  • In a food processor, roughly blend the rolled oats into a flour texture. Pour into a seperate mixture bowl.

  • Add the desiccated coconut, cinnamon and stir to combine.

  • Roughly chop the medjool dates up finely add them into the mixture.

  • Followed by the peanut butter (optional) or tahini and vanilla extract.

  • Using your hands to knead the mixture together.

  • Press the mixture into the baking tray 1-2cm in depth and fridgerate for 1 hour.

  • Slice bars evenly and store in the fridge or freezer for longer keeping & enjoy!
