Homemade Fish Sticks

Serves:  4
Preparation:  10 minutes       
Cooking:  15 minutes

Ingredients:  

  • 400g fish fillets

  • Olive oil

  • 1 ¼ cup gluten free breadcrumbs

  • 2 tablespoons flour

  • ¼ cup parmesan

  • ¼ teaspoon salt

  • 1 egg

  • 4 tablespoons olive oil

Serving:

  • Lemon wedges

  • ¼ cup Greek yogurt

  • Finely chopped chives or parsley

Method:

Preheat oven to 180 degrees.

Mix egg, parmesan, breadcrumbs and salt together in a bowl.

Cut the fish into strips and place each strip into the batter and ensure it is well covered in batter.

Transfer to a baking tray and spray with olive oil or drizzle in olive oil. Bake for 13-15 minutes or until crispy on the outside.

Serve with Greek yogurt, lemon wedges and chopped herbs.
