Coconut Bliss Ball Snowmen
Celebrate the festive season with these Coconut Bliss Ball Snowmen. A creative way to involve your toddler in the kitchen and a great festive Christmas plate to bring to a family lunch or dinner.

Serves 6 snowmen
YOU WILL NEED
150g raw shredded coconut + 20g for rolling
6 tbsp ground almond meal
3 tbsp unsweetened coconut milk
3 tbsp coconut oil, melted
2 tbsp maple syrup
1/2 tsp vanilla extract
DECORATION:
Cake pop sticks
Raisins
Dried apricots
Glitter wires
METHOD
Whiz the shredded coconut and almond meal in a food processor or blender.
Add the wet ingredients (unsweetened coconut milk, coconut oil, maple and vanilla extract).
Scrape down the sides, until the mixture is sticky and well combined.
Sprinkle the extra shredded coconut onto a plate, roll the mixture into ball using the palm of your hand and roll into the shredded coconut.
Thread three rolled balls onto each stick.
Cut the raisins into tiny pieces for the snowman’s eyes and mouth, and the apricots into triangles for the noses.
Store in the fridge!
