Carrot and Cheese Bites

Ingredients:
2 cups shredded carrots
1 cup cheddar cheese, grated
1 cup panko breadcrumbs
2 eggs
2 tablespoons olive oil
1 clove garlic, minced
½ teaspoon salt
Method:
Preheat oven to 180 degrees and line an oven tray with baking paper.
Add all ingredients in a bowl and combine. If the mixture if too dry, add another tablespoon of olive oil.
Using a tablespoon, scoop mixture and roll into a patty using hands. Place onto the oven tray. Repeat until all the mixture is used.
Bake the bites for 20 minutes or until crispy. Remove from the oven and let cool before serving.
