Banana Almond Butter Muffins

Family friendly recipe alert! Banana Almond Butter Muffins by Libby Boxall. This one makes great use of overripe bananas.

Serves: 12 

  

Ingredients:  

2 cups overripe bananas, mashed 

1/3 cup maple syrup 

¼ cup almond butter 

½ cup milk 

2 eggs 

1 teaspoon cinnamon 

1 ½ cup all-purpose flour 

½ teaspoon baking soda 

1 ½ teaspoons baking powder 

¼ teaspoon salt 

 

Method:  

Preheat the oven to 180 degrees. 

Grease a muffin pan with olive oil or butter. 

In a bowl, mash the bananas. Add the almond butter, maple syrup, eggs, milk and cinnamon and combine. 

Add the flour, baking soda, baking powder, and salt.  

Using a tablespoon, scoop batter into each muffin pan. 

Bake for 20 minutes or until cooked through.
